We have heard it everywhere and from everyone “EAT WHOLE ORGANIC FOODS” or “EAT AS ORGANIC AS POSSIBLE”! It is in the media, it is visibly promoted through our Farmers Markets, even the First Lady of the United States has made it her personal crusade to educate us on the importance of eating natural “non processed” foods. So what is holding some of us back?
Often times when I meet with my clients I hear a lot of excuses of why they don’t or can’t eat whole organic foods. The excuses that I hear most often are “I live alone and vegetables just go bad before I can eat them” or “my kids and/or my husband wont eat them (or try them) so it’s just a waste of money”. In my five years as a Health Educator I have pretty much heard it all!
Well today I want to share with you something that not only has helped me to eat whole organic foods, but enjoy the process of growing my own! NO….you don’t have to have a green thumb, a huge plot of land, or even a yard for that matter. It’s called an Earth Box! The Earth Box can be used to grow whatever your heart desires, takes up very limited space, self watering, and above all really fun to do! I bought my Earth Box about seven weeks ago and have had a blast growing vegetables myself for the first time. I am growing spinach, brussels sprouts, and snap peas (which by the way, are SUPER CUTE).
What I love about the Earth Box is that ANYONE and I mean ANYONE can grow one. The Earth Box is great for kids because it…. number one, gets them off the video games and it’s also something active each day that they can do out doors. Now I know for a fact if your kids have spent the time to grow their own veggies, they most likely will want to at least try them. The Earth Box is also great if you do not have a yard or room to plant your own garden. The Earth Box can fit on a tiny back apartment deck or a front step, it also has wheels so its really easy to move around (no lifting)!
While buying my Earth Box, a more “mature” woman was telling me that she had one and she was able to make her own home grown salads every night for almost three months before she had to replant it. Now that is cool! She was also bragging about how she could easily roll it around her yard to get the proper amount of sunlight required for her plants, then role it over to the hose when it needed water added to the self watering device. She sold me!

With every season change you can change your harvest! You can do an herb garden, cutting flowers, summer veggies be as creative as you want OR keep it simple…maybe just salad greens. I started my Earth Box with “starter” plants but you can also start straight from seeds.

Be creative, it’s actually interesting to see how some of these vegetable develop and to watch them go through all their amazing stages…..just beautiful!
