Turkey Meatball Arrabiata
Instructions
  1. Heat oven to 400 F. Line a 13x9-inch pan with foil and spray with cooking spray.
  2. In a large bowl, mix all meatball ingredients. Shape mixture into 24 (1 - inch) balls. Place 1 inch apart in pan. Bake uncovered for 18-22 minutes or until no longer pink in center.
  3. Meanwhile, in a large pot, sauté cauliflower and kale with the chicken stock over medium high heat until al dente (approximately 7-10 minutes).
  4. Add now baked meatballs, tomato sauce and chili flakes. Let simmer together for 5 minutes to allow vegetables to cook through and flavors to marry.
  5. Serve in 6 bowls with a sprinkling of Parmesan cheese and freshly chopped basil.
