Tilapia with Olive, Snap Pea and Pistachio
Instructions
  1. Place the tilapia fillets on each piece of parchment paper
  2. Combine all ingredients except pistachios in a medium sized bowl and toss
  3. Spoon ¼ of mixture onto each fillet
  4. Fold paper over the fish and seal the packet by folding the edges over
  5. Bake at 425 f until the fish is opaque throughout, about 12 to 14 minutes
  6. Remove from oven, place on serving plate, open packet and top fish with chopped pistachios
  7. Serve
