Tilapia with Kale, Lemon, Artichoke, and Caper
Instructions
  1. Begin with 4 large pieces of parchment paper and 4- 4 ounce pieces of fish
  2. Place 1 tilapia fillet on each piece of parchment paper
  3. Combine all ingredients except the capers in a medium sized bowl, toss and spoon 1⁄4 of mixture onto each fillet.
  4. Fold paper over the fish and seal the packet by folding the edges over.
  5. Bake at 425F until the fish is opaque throughout, about 7 to 10 minutes.
  6. Remove from oven, place on serving plate, open packet and top fish with capers. Serve.
