Tilapia with Jalapeno, Coconut, and Cilantro
Place 1 tilapia fillet on each piece of parchment paper.
Spoon 1 TBLS coconut milk ¼ of the chopped jalapeno over each fillet.
Fold paper over the fish and seal the packet by folding the edges over.
Bake at 425 f until the fish is opaque throughout, about 7 to 10 minutes.
Remove from oven, place on serving plate, open packet and top fish with ¼ of the cilantro and a lime wedge.
