Pecan Pie Muffins
  1. In a small-medium bowl, whisk the butter, eggs, vanilla and sweeteners.
  2. Whisk in the Carbquik until a smooth batter forms.
  3. Stir in the pecans.
  4. Spoon into 12 greased or paper-lined muffin tins
  5. Bake at 350º 15 minutes until golden brown and set in the center.
  6. Carefully remove them from the tins and cool on a wire rack.
