You can use this method to make other favorites, such as fish sticks. You can also bread & bake vegetables (such as eggplant, zucchini or cauliflower)in pretty much the same way.
Chicken Nuggets (Low-carb)
Set oven on high heat (as high as it can go).
Cut chicken breast into large chunks, about 6 chucks in a single breast. Beat egg and egg whites together. In a seperate bowl mix finely ground flaxseed with your favorite mix of herbs and spices.
Roll chicken chunks in beaten eggs and then through the flaxeed and spices mixture.
Place on a cookie sheet in the middle of the oven. Bake for about 20 minutes (less if you make the nuggies smaller), turning over half way through.
