Chicken & Brussels Sprouts with Mustard Sauce
Instructions
  1. Chicken
  2. Preheat oven to 450°F.
  3. Heat a large ovenproof skillet over high heat.
  4. Add 1/2 tablespoon oil.
  5. Sprinkle chicken with 1/4 teaspoon salt and pepper; add to pan.
  6. Cook 3 minutes or until browned.
  7. Turn chicken; place pan in oven. Bake at 450° for 9 minutes or until done.
  8. Remove chicken from pan; keep warm.
  9. Sauce
  10. Heat pan over medium-high heat.
  11. Add 1/2 cup broth and cider; bring to a boil, scraping pan to loosen browned bits.
  12. Reduce heat to medium-low; simmer 4 minutes or until thickened.
  13. Whisk in mustard & and parsley.
  14. Brussels Sprouts
  15. Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat.
  16. Add Brussels sprouts; sauté 2 minutes or until lightly browned.
  17. Add remaining 1/8 teaspoon salt and 1/4 cup broth to pan; cover and cook 4 minutes or until crisp-tender.
  18. Serve sprouts with chicken and sauce.
