When you have a bunch of leftover celery that’s not crunchy anymore, try making this soup to avoid wasting it.

Celery Soup
  1. In a large pot or wok, saute chicken and garlic in a little chicken broth until the chicken is no longer pink. Add celery, saute for 3-5 minutes. Add the rest of the broth and allow to just come to a boil.
  2. Put Laughing Cow wedges in a small bowl with milk and microwave for 15-30 seconds to soften. Put in blender/food processor. With a slotted spoon, add half the celery/chicken mixture in the food processor. Blend till most of the chunks are gone.
  3. Add mixture back to pot. Add curry, salt and pepper. You can also add a little celery salt or celery seed if you want the celery flavor to be stronger.
