This recipe combines two fall favorites: pumpkins and waffles.

With ingredients like Carbquick, almond meal and pure pumpkin, you can indulge in these all season long.

Ingredients

  • 2 ½ cups of Carbquick
  • ½ cup of almond meal (found at Trader Joe’s)
  • ¾ cup water
  • ½ cup fat free half and half
  • ½ cup Egg Substitute
  • 1 tbsp vanilla extract
  • Splenda to taste
  • ½ can of pure pumpkin
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg

Directions

Combine all ingredients in a bowl. Mix just enough to combine all ingredients. Adjust water as needed to make a smooth, pourable batter. Do not over mix.
