low carb trail mixWhile you may love that traditional trail mix with the salty raisins and chocolate pieces, this low-carb version is much healthier — and it still tastes great.

The best part? Superfood goji berries add just the right amount of sweet. Divide this up into snack-size portions and you’ll have something to satisfy hunger on those days you’re strapped for time. 

Ingredients

¼ cup raw cashews
¼ cup raw almonds
¼ cup raw walnuts
2 tablespoons goji berries, unsweetened
2 tablespoons shaved coconut, unsweetened

Directions

Place all ingredients in a medium sized bowl and mix well. With a ⅛ cup measuring cup, scoop out 1.5 ounces of mix and place in small snack-sized, airtight containers or baggies until you are ready to eat.

Servings: Makes 6 servings; 1.5 ounces per serving
