low carb pumpkin breadPumpkin isn’t just a fall food. 

It’s a rich and creamy fruit that can lend consistency and earthy flavor to low-carb desserts. This “bread” is made with Health Wise Oatmeal, which you can pick up in our Shop GreenLite store.

Ingredients

3 egg whites
1 1/4 cup pure pumpkin
1 tsp vanilla or maple extract
1/2 cup unsweetened almond milk
3 packets of Health Wise oatmeal
1 1/2 tsp ground cinnamon
1 tsp pumpkin pie spice
1/4 tsp sea salt
1 tsp baking powder
Stevia (optional, for sweetness)

Cream Cheese Layer:
2/3 cup low-fat cream cheese
1 egg white
½ tsp stevia

Directions

Preheat oven to 350 degrees. Spray a loaf pan with cooking spray. Set aside.

To make the bread, combine the wet ingredients in a medium bowl and stir until well combined. Combine the dry ingredients in a separate medium bowl. Mix the wet and dry ingredients together.

To make the cream cheese layer, microwave the cream cheese for 30 seconds, or until just softened. Combine the egg white and sweetener with the cream cheese, and stir until well combined.

Pour half of the batter into the pan, smoothing it out with a spatula. Pour cream cheese layer on top of the first layer of pumpkin batter. Pour the remaining pumpkin batter over the cream cheese layer. Bake for 55-60 minutes, or until a toothpick comes out clean.
