GreenLite Recipe: GreenLite Cole Slaw (Photo by PBS)

This refreshing cole slaw is the perfect addition to any picnic or barbecue!

Ingredients (4 servings)

  • 1/2 cup Fat Free Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon extra-virgin olive oil
  • 1/2 lemon, juiced
  • Salt and freshly ground black pepper
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sugar substitute or pinch
  • 1 16 ounce store-bought bag shredded slaw mix (containing red and green cabbage and carrots)

Instructions

  • In a large bowl, mix together the dressing ingredients. Add the shredded slaw mix and toss until combined.
