Adapted from “The Omni Diet,” this low-carb salad includes golden raisins, crunchy sesame seeds, and chopped pecans. Tossed with a simple dressing of honey, olive oil, and sea salt, we know you’ll love the unique flavors going on here. If you make and prep your chicken ahead of time, you can assemble the ingredients quickly or make up some pre-prepared salads for lunches during the week.
½ pound organic kale
1 ½ teaspoons raw honey
½ teaspoon sea salt
½ teaspoon ground black pepper
4 tablespoons extra virgin olive oil
1 tablespoon sesame oil
¼ cup golden raisins, (loosely packed)
2 tablespoons toasted sesame seeds
¼ cup roughly chopped pecans
3 cups chopped chicken
1. Tear kale leaves into bite-sized pieces and place in a large salad bowl.
2. In a small bowl whisk together honey, salt, pepper, olive oil, and sesame oil.
3. Toss raisins, sesame seeds, nuts, and dressing with kale. Refrigerate for at least 30 minutes before serving.
4. Serve salad on plates and top with chicken.
