Caulliflower, when diced very fine or put into the food processor, can make an excellent base for crusts or “breads.”
These “breadsticks” firm up very well in the oven thanks to eggs and cheese. With some garlic and seasoning, they taste delicious warm or cold, alone or with some dipping sauce. (They also make the perfect portable snack!)
Hint: these will go fast, so we recommend doubling the recipe.
1 cup very finely diced raw cauliflower (use a food processor to make this faster)
3/4 cup shredded mozzarella cheese
3/4 cup Parmesan cheese
1 egg, beaten
3 cloves garlic, crushed or diced fine
1/2 teaspoon salt
1 teaspoon of Italian seasoning mix
Preheat oven to 450 degrees
Steam cauliflower until soft and set aside to cool down to room temperature.
In a medium sized bowl, mix the steamed cauliflower, egg, 1/2 cup of Parmesan and 1/2 cup of mozzarella. Add one crushed garlic clove, Italian seasoning and salt. Mix to combine all ingredients.
Spoon the mixture onto the center of a baking sheet pan covered with parchment paper. The mixture will be a little loose. Form the mixture into a large rectangle or square shape, using a fork or flat spatula to press out.
Place into the preheated oven and bake for 15 minutes or until the edges are turning a light golden brown.
Remove from the oven, spread the remaining crushed garlic over the top and sprinkle on the remaining Parmesan and Mozzarella and place back into the oven just until the cheese melts. Remove and slice into 8 “bread stick” shaped servings.
