This is a great recipe for when you’re craving yummy carbs, but want to keep those cravings healthy! Top with fresh fruit for an extra delicious treat!
- 2 cups Carbquik
- 1/8 cup 0% Fage non-fat yogurt, diluted with 1 tablespoon non-fat milk
- ½-1 cup water *
- 1 teaspoon vanilla extract
- Sugar-free sweetener, such as Stevia or Splenda
- 1 egg, beaten
- Pam/olive oil spray
Combine all ingredients in a bowl. Mix just enough to combine all ingredients. Adjust water as needed to make a smooth, pourable batter. Do not over mix.
Lightly coat nonstick skillet with cooking spray and warm over medium heat. Ladle pancake batter into pan. Cook until underside is lightly browned. Flip when bubbles form and edges are cooked.
*You can use soda water instead of regular water to give the pancakes a higher rise.
